More pics to come. We loved it. (well, most of it anwyay) I should be packing. What's new. We're out of our humble house tomorrow. Our hosts are coming back from their cruise. We'll be in a hotel for 4 nights, then we'll be Tally bound...and then home :) Four months went by so fast!

a big easy weekend
Okay, we will. See you after the weekend everyone. More posts to come about my birthday, and our little mini vaca we are taking with friends from the opera to New Orleans! I should be packing but this seemed more important somehow. I also had a revelation the other night while looking at older blog posts that I want to do a series of posts about events that happened way before I knew what blogger was, like our wedding and such. So, maybe this summer while I have some free time you'll see more of that. :)
On a more important note...we hope everyone has an amazing Easter weekend!

it's funny
This little post is to share with you one of the funniest things I've seen in blogland in ahwile. I think it's most funny because I can relate to it so well. If you are easily offended by the "b" word, sorry. You don't have to peek. I most definitely live with chronic "b" face.

Just because she's so cute
I know most of you have not been properly introduced to the newest member of our family, Ms. Virginia Irene. My cousin, Kass delivered this beauty right after Christmas. She is absolutely darling. I can't wait to get home and kiss her all over her face. I promise not to slobber too much.
I mean...really. Look at her face.
Her parents are very lucky, indeed.

New York blog lovin'

Next month Gabe and I are taking a little trip to NYC. He has some business to attend to and I have really been wanting to go since his last adventurous trip. So, we decided to go together this time. In honor of our new york trip I have been doing some research on some of my favorite blogs for ideas about what to do and where to eat. I'm sure I'll give you the full run down on what we end up doing, but here are some of the places we'd like to visit.
***Natalie of Nat the Fat Rat gave some suggestions on what's worth seeing and what's not.
She also taught me that some of New York's most popular museums are run on a suggested donation system. The $20 fee is optional! Yippie skippy. $40 to visit a museum seemed kind of steep. Now, maybe we can "suggest" something else.
***Katy of No Big Dill took an awesome trip to the city with her family and I am dying to shop in some of those stores! Look at this second installment too.

Operazzi Ball

Last week Pensacola Opera held the Operazi Ball, a fundraiser and dinner for patrons of the opera. It was so much fun. They did a great job with the decor and dinner was delicious. There was a live auction that was so crazy to watch! I kept wanting to bid on stuff, specifially a David Yurman necklace that was like 10k retail. Haha. I'm so funny. Anyway, it was good times!

Roasted Veggie Calzones
Here is a new recipe we tried lately that was super tasty. I originally found this recipe on tasty kitchen, but then we ended up doing things a little differently. Mainly because we didn't need 8 of them!
•1 whole Medium Zucchinis, Diced
•2 whole Large Carrots, Peeled And Diced
•1/2 whole Medium Onion, Large Dice
•2 cloves Garlic, Smashed
•3 Tablespoons Olive Oil, Divided
•Dried Basil
•Salt
•Pepper
•1 pound Whole Wheat Pizza Dough (already made dough usually always comes in 1 lb.)
•1 cup Good Quality Pizza Sauce
•2 cups Grated Mozzarella Cheese
•Grated Parmesan Cheese
•Garlic Salt
•Parsley Flakes
The most challenging part of this recipe was finding whole wheat dough. I only found regular premade pizza dough at Publix. I didn't want to make my own dough yet, just wanted to try the recipe first. Note to self- do not try and manipulate cold dough in a time crunch. Will not work. So instead of four calzones, we ended up with two big ones. With time the dough could be divided about 4-6 times.
Preheat oven to 400 degrees. First dice up your veggies (use any veggie you like), place then in one layer on a cookie sheet and then sprinkle then with salt, pepper, and olive oil. Bake for 20 minutes. Divide your dough in half then roll out. Once the size is big enough, flatten them out and first place the sauce, then the mozzarella cheese and then the roasted veggies. Top those off with a good helping of parmesean cheese. Fold them over, close them and then cut a hole at the top for steam. Bake for 20-25 minutes. Sooooooo delicious!

A visit
Gabe's Mom came to visit us last week. We toured her around our little coastal city and enjoyed the beautiful weather. The city seems to be in full bloom.

P-cola
Boat ride on a Sunday evening. Pretty much one of the best things ever.

We have a month left here in Pensacola. Time has flown. We love it here, but are also ready to move on. I have like 8 more shifts left. Can't believe it. I have learned so much through this experience as an agency nurse. Flexibilty has become my new gig. Surprising, but it's working. Had a terrible day on Wednesday. I called Gabe crying on my lunch break. Those kind of days are hard, but they only last twelve hours. Gabe picked me up that night and had a huge fountain diet coke for me AND we made a last minute decision to go to Bruster's for ice cream. BEFORE dinner. I love him so much. He will do anything to make me happy. I think Brusters made him pretty happy too. Have you had their key lime pie ice cream? For real. Go now.
