Roasted Veggie Calzones

Here is a new recipe we tried lately that was super tasty. I originally found this recipe on tasty kitchen, but then we ended up doing things a little differently. Mainly because we didn't need 8 of them!

•1 whole Medium Zucchinis, Diced

•2 whole Large Carrots, Peeled And Diced

•1/2 whole Medium Onion, Large Dice

•2 cloves Garlic, Smashed

•3 Tablespoons Olive Oil, Divided

•Dried Basil

•Salt

•Pepper

•1 pound Whole Wheat Pizza Dough (already made dough usually always comes in 1 lb.)

•1 cup Good Quality Pizza Sauce

•2 cups Grated Mozzarella Cheese

•Grated Parmesan Cheese

•Garlic Salt

•Parsley Flakes


The most challenging part of this recipe was finding whole wheat dough. I only found regular premade pizza dough at Publix. I didn't want to make my own dough yet, just wanted to try the recipe first. Note to self- do not try and manipulate cold dough in a time crunch. Will not work. So instead of four calzones, we ended up with two big ones. With time the dough could be divided about 4-6 times.

Preheat oven to 400 degrees. First dice up your veggies (use any veggie you like), place then in one layer on a cookie sheet and then sprinkle then with salt, pepper, and olive oil. Bake for 20 minutes. Divide your dough in half then roll out. Once the size is big enough, flatten them out and first place the sauce, then the mozzarella cheese and then the roasted veggies. Top those off with a good helping of parmesean cheese. Fold them over, close them and then cut a hole at the top for steam. Bake for 20-25 minutes. Sooooooo delicious!
